So I thought it's time to show you what has been on my plate again as the local markets are blooming and offer all kinds of lovely fruits. Also I have been shopping and found some wonderful snacks as well that I am in need to show.


Breakfast: A lovely fruit bowl with grapes, nectarine and blueberries. Just very lovely.
Lunch: A bowl of my beloved cauliflower, broccoli and carrot mix with some spices. How I have missed it! 
Snack: a stevia sweetened ice tea. I was labeled vegan on the bag and I can reassure it was just amazing. I am surely going to buy this again. Also I had a wild peach which was very juicy and awfully great and some vegan raspberry- apple gummy bears. Really good energy boost I have to say. I think this is going to be my go to snack for study times when I am back in school next week.
Dinner: Now this was my first time ever trying an avocado. I also added some left over veg I had and a vegan egg as well topped with some vegan tomato sauce and spiced well.
I was good.

Vegan Avocado- Egg Recipe


Ingredients:

- half an avocado
- preferred vegetables
- vegan egg supplement
- sun flower oil/ coconut oil
- salt, pepper and pepper bell powder

Step 1



Prepare the vegan egg after the instructions on the back of the package in a frying pan with some oil (I used sunflower although I prefer coconut oil.)

Step 2



Prepare your avocado seasoning it with your preferred herbs. I only used salt pepper and decided to use pepper bell powder as well 
As soon as your egg is fried, put it in the hole in your avocado. 

Step 3


On a plate I placed the avocado plus egg on the oven for 10 minutes on 150 degrees celsius until it got lightly brown. 

Step 4


Simply cut come vegetables and place them around your avocado. If you like it, pour some tomato sauce on it as well and your done. 
I enjoyed my avocado surely and I especially loved the vegan egg! It was a lovely little combination of warm and cold vegetables that went well together.
