Hello Everyone!

So yesterday I had a kind of rude thing happening to me in the grocery store. I was going to buy an iced tea for my friend who was at work and I was going to visit her after the going to the shops. However, as I was looking for that specific iced tea it was nowhere to be found. I love to drink iced tea by myself and I just though this is quit rude! You can even pick up your favorite day time drink on a 35 degrees day. This just cannot be! 

So today I didn't even bother looking and just invented my own ice tea from scratch that I know I will enjoy much more, is always available, first off is vegan, cheaper and I can get a post out of it as well. I would actually thank the grocery shop for being rude at this point.

The recipe is actually very simple and it's done in under 10 minutes. Also I loved the fact that it was from scratch, this just made my day. It looks so nicely pink/red and pretty. So fruity that I want to have a bath in it!

Ingredients:

- half a lemon

two filters of your favorite summer tea

a cup of frozen fruit/ berries

Step 1 

Pretty much all you need to do is to boil water, then fill it in a big container to make tea but only fill 1/3 of the container. Then cut three slices off of the lemon and squeeze the rest of the lemon in the container. Lastly put in the lemon slices and the cup of berries and fill the rest of the container with cold water. 

Let it rest for a couple of minutes to cool down 

Step 2 

Now go outside with a nice book and your iced tea and enjoy your life!

Hello Everyone! 

This year symbols a real summer to me since it's really hot in the first time for 3 years. Like constantly over 30 degrees Celsius. And this actually allows me and all the the other people of course as well to be really outdoorsy. Except the last days I have been rather introverted because of work and with the current heat it's not the best idea to hum around outside to be honest. 

Anyways I made a list of my three favorite things in summer and I want to show:

My first favorite thing this summer is skating. 

I love skating, feeling the wind through my hair, the fresh air, beautiful landscape. All whilst either having a great conversation with my sister who sometimes comes with me or listening to nice music. Its so peaceful and I just feel free. 

This year the weather has been great, very hot and sunny so there are a lot of opportunities to actually go skating which I am using as much as I can. Also skating is a great exercise to tone your legs, get fit and active. But the best thing is that your can either do it by yourself or with others as well. 

The second best thing this summer is reading.

Currently I am reading two books. One for when I am in a more serious mood and the other for when I need light lectures. The book in the picture is "An apple a day" by Emma Woolf and deals with her journey from anorexia recovery. It's a personal topic to me and I enjoy everything I can get in my hand about recovery. The other book is called "Midnight Rose" from Lucinda Riley. She is one of my favorite authors and generally writes about historic family love stories. Just some somatic book and I can guarantee it'll make me cry in the end or leave me speechless just like the others.

And last but not least: A simple melon can make my morning this year.

 I don't know how I did it last year but this year all I want it melon. It's not only very much hydrating the body after a good nights sleep but it also tastes amazingly sweet and amazing, fresh and cool. Also it is very light, boosts your metabolism and it pretty to look at as well. I am seriously in love! I love to just cut the whole thing in two halves and spoon it out.

Hello Everyone! 

Another What I ate Wednesday as a vegan post as I real like them and I always get to try new things, things that I can cook, experiment and eventually get my personal cookbook done. 

Breakfast was a lovely big bowl of oatmeal with cinnamon and sugar, strawberries, a nectarine and half a pear and a wonderful huge cup of coffee.

Lunch: This is my broccoli salad bowl with broccoli of course and cucumber and tomatoes. I feel like onion when I talk about a broccoli salad but I just detest onions I don't know. However, I seasoned them with salt and pepper and a bit of pepper powder.

My dinner: was my first ever vegan omelette. I used my vegan egg replacement (3 eggs) and just added the left over broccoli and some cauliflower with it. In the omelette is vegan mozzarella which my mother bought me. I loved it and it is from now on my favorite meal at the moment.

Hello Everyone! 

As I did skip last weeks post, I did not want to spare you and of course I took pictures of my meals but I just didn't have enough free space of mind to write everything down. So this time you are left with my meals of tuesday last and this week! 

Please don't fall off your chair because of all of this excitement.

Last week

Breakfast: I had my fresh and juicy fruit salad as I have every day. I have been still hanging on to the pears and apples and nectarines. And they are still so good! 

Lunch: It was really poorly but of all the stress because of moving  I skipped it everyday (do not try at home!) and just had an iced tea.

Yet Dinner: This just makes my heart beat again. It was the best meal I've had in a long time and I enjoyed it so much. Steamed carrots, cauliflower and cabbage with spices for fried potatoes. A really weird combination but so good. I made half of the portion a soup and the other one just like that.

This week

Breakfast: This week I have moved on from the nectarines and changed them for cherries. Fruit salad with cherries, apples and pears underneath.They are in season and I just stole a couple from our neighbors tree. It does hang into our garden so it's not actually stealing, I googled. 

Lunch: That day I actually did have lunch and it was really great. It's been so hot and one surely need something hydrating so I had a caesar salad (self- made). Simply romain lettuce, cherry tomatoes, red bell pepper and cucumber mixed with a caesar salad vegan dressing.

Dinner: And because I am getting back to the steamed vegetables lately I had steamed broccoli, cauliflower and carrots. Just like the old days.

Now for all of those who wonder the recipe as a pictured tutorial

As you can see we only have 5 simply steps to concur.

Step 1:

 Chop all the needed or wanted vegetables and put them in a deep frying pan.

Step 2: 

Pure in water till all the vegetables are covered. Set to boil

Step 3: 

Use one tablespoon full of vegetable bouillon and mix it in the water in the pan.

Step 4

Wait until it boils. At this point I recommend to do the cleaning.

Step 5.1:

If you want a soup your finished. Just set aside and dish it up.

Step 5.2:

If you want to have them without all that water just rinse the water and now do not put any more salt in it. The bouillon seriously has enough. But you can use other spices as you like to make it more interesting in the taste.

Hello Everyone!

Over the last week I took some pictures of the food that I have eaten. I didn't think that those posts would be accepted as greatly as they did and I was ask to do those kind of posts more regularly. 

So my favorite meal of the day is breakfast. I love to cut myself some different fruit and lately I have really been into pineapple! I hardly have lunch and if I do they are hardly worth picturing. But anyways my lunches contain another piece of fruit or some hot coco. Something really quick and light that I can have on the go. When dinner time comes around I am usually very hungry understandably and I like to make myself a humongous bowl of stemmed or cut vegetables. Although lately I have even started cooking a lot more which you might know from previous blog posts.

But enough with the rambling- here we go: 

Breakfast: 

The left picture shoes my apple and pineapple fruit salad from tuesday and the picture on the right shows us a pear, some grapes cut in half and a banana with cinnamon sprinkled on them.

Some more colourful breakfast coming now. On the top we have an apple, a pineapple with some blueberries.  Left picture on the bottom is a fruit salad with kiwi, strawberries and a pineapple and the one right there is pineapple again, strawberries and grapes. I put cinnamon on all of the fruit salad because I like the combined flavor of it with the sweetness of the fruit.

Dinners:

And these are the two dinners I enjoyed most in this week. First were my Carrot Nuggets which you might know from another post. I had them with a cut up Zucchini and tomatoes. This was seriously so, so good!

And the second one was a meal of stemmed cauliflower and carrots combined with zucchini again and red pepper bell. I had it with soy sauce which made it taste really good. Steemed cauliflower and carrot and broccoli are one of my favorite things to make. 

Well these were the meals I enjoyed the most out of the whole week. I would love to hear or see what you like to eat, maybe I can get some inspiration out of it and I hope you liked the post!

Hello Everyone! 

I just really quickly wanted to post what I ate on Wednesday. Even though it's monday now.. 

I started my day with a lovely bowl of strawberries and pineapple. And let me tell you this was so amazing and honestly was the best bowl of fruit that I've had in a while. It was really fresh and light and just amazing tasting because I also put cinnamon on it. Just a perfect start in the day.

For lunch I just had something little. I cut up an apple in the tiniest people on earth and microwaved them for 2,5 minutes with 600 watt also putting cinnamon on them. It tastes like a healthy, small portion of apple pie, let me tell you, you have to try this!

So I was basically hungry at dinner time so I had a lovely mug of black tea and a coffee ( because I still had to go to work) and a huge bowl with a sliced up zucchini and a sliced cucumber as well as 250gr of cherry tomatoes.

I got some little chocolate cravings after work so I decided to make myself a nice cup of hot chocolate and drunk that before I fell asleep. Really lovely.

I have decided, next week, since it's my second and last week of intern-shipping I will actually start cooking the meals I have found and saved. It's the last week that I will probably will have actually time to do so before the summer holidays.

So you can be looking forward to a couple of more vegan food post if your interested.

Hello Everyone!

Today I thought I picture what I eat in the day. I always find it so interesting to see what other people eat so I will now do my contribution to this topic. I hope you will enjoy my vegan food diary! 

For Breakfast I had a huge portion of grapes. They were called "Red Globe" and tasted very sweet. They were also very filling because of the quantity. I loved it. 

I find because of the amount of carbs in them, they give a lot of great energy in the mornings and make m start my day a lot more awakened.

With the grapes I usually have a cup of coffee, because I am not an actual person before that.

For lunch I just grab a quick bite. This is one of my absolut favorites at the moment. Red cabbage. This is a normal plate full of deliciousness of red power and nutrition. 

I always look forward to it so much I am actually sad when I ate it. 

By dinner I am really starved and almost always get seconds. Today I had salad with tomatoes and zucchini. I mixed that with soy sauce and a bit of salt. 

It's really amazing what you can create out of only zucchinis. You can veganize them to noodles. I want to try that this weekend and write a post about it. 

Fazit: I am full and not hungry. A plus is also that I feel so much more awake and full of energy. I can definitely recommend at least one day a week of raw vegan diet as it seems to really optimize your health or well being a lot in a positive way.
